Creamy Camembert Calvados by Teresa Barajas
Ingredients :
Camembert Cold Foam
2 oz Camembert cheese
1 tsp sugar
Pinch of salt
Splash of vanilla extract
Pinch of cinnamon
-2 oz whipping cream
-Splash of Calvados
For the Cocktail:
1.5 oz Calvados of your choice
0.5 oz lemon juice
0.5 oz simple syrup
3 oz fresh apple juice
Ice cubes
Instructions:
1. In a mixing bowl, combine the Camembert cheese, sugar, salt, vanilla extract, and cinnamon.
2. Whip the mixture with a hand whisk or electric mixer until it forms a fluffy foam.While continuing to whisk, slowly pour in the whipping cream until fully incorporated, and the foam becomes creamy and smooth.
3. Chill in fridge until ready to use use same day
Prepare the Cocktail:
1. Combine Calvados, lemon juice, simple syrup, and fresh apple juice in a shaker.
2. Add ice cubes to the shaker and stir or shake vigorously for 15-20 seconds to chill the mixture.
3. Strain the cocktail into a chilled glass.
4. Using a spoon, gently layer the prepared cold Camembert foam Camembert cocktail.
