The Persistance of Memory by Erin Ashford
Ingredients :
1 oz Calvados (Coquerel VS)
0.5 oz Mezcal (Amaras Verde)
0.5 oz Amaro (Amaro Nonino)
0.5 oz Demerara syrup (2:1)
0.75 oz Lime juice
3 dashes Angostura bitters
Instructions:
1. Combine all ingredients in a shaker tin.
2. Fill the tin fully with cubed ice.
3. Shake 10-15 times or until the shaker is icy cold.
4. Using a hawthorne and julep strainer, double strain the cocktail over an ice filled double rocks glass.
5. Garnish with a thinly sliced lime wheel and cherry skewered with a metal cocktail pick.
